Baked Rice Pudding
Gibraltarian rice pudding is a truly delightful dish. It’s a soft pudding rice served in a creamy sweet sauce, with a sprinkled cinnamon topping.
I have a recipe for the traditional version, but this version is a baked twist on the traditional stove top dessert.
I find that when you have lots of things to do, the fact that you can just mix these ingredients, slide the pan into the oven and forget about it (at least for 30 mins), helps with keeping the pressure of the cook, whilst still producing a delicious dessert to round of your meal.
This dessert is best served warm, but is just as good cold.

Ingredients
75 grams Pudding Rice
1 litre Milk - I use semi skimmed because this is what I usually have at home. Full fat works even better.
200ml cooking cream
3 heaped tablespoons granulated sugar
Pinch of nutmeg
Rind of 1/2 lemon
Cinnamon to sprinkle on top when serving
Butter or oil for greasing your pan

Pre heat your oven to 180° C.
Grease your ovenproof pan - I usually use a 9x12 inch pyrex dish

Place the rice, milk, cream, sugar and lemon rind in a bowl and mix to incorporate throughly.

Pour the mix into your pan, making sure the ingredients are distributed evenly, and sprinkle the nutmeg over the mix.

Bake on the middle shelf of your oven uncovered for 1 hour.
After the first 30 mins stir the mix, the continue to cook uncovered.
A crust will form over the top of the mix, this helps to keep the moisture inside which in turn helps cook your rice quicker.

After an hour, take out of the oven, and taste to make sure rice is done. At this point the rice should be soft if not, continue to bake for an extra 15-20 minutes. The rice should still have plenty of sauce, which it will continue to absorb as it cools. If its too dry add a little more milk - previously warmed up.

Allow to cool for some 10-15 mins, then remove the crust (if you don't like it) and serve with Cinnamon sprinkled over the top.
