Creamy Sweet Potato Soup

Ingredients
4 medium sized sweet potatoes, peeled and diced
1 medium onion, diced
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon ground nutmeg
1/4 teaspoon chili flakes (optional)(can be substituted with same amount of ground Ñoras)
1 litre chicken broth
1 sprig fresh thyme, or 1/2 teaspoon dried thyme
400 ml coconut milk (or any plant-based milk) any cooking cream will do in a pinch
Salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium heat. Add the diced onion and garlic. Sauté until softened and translucent, about 5 minutes.

Add the chili powder (if using), cooking for another minute to release their flavors.

Add the ground nutmeg , thyme and diced sweet potatoes to the pot, and pour in the chicken broth.
Bring to a boil, then reduce to a simmer.
Cover and cook for 20–25 minutes, or until the sweet potatoes are tender. Alternatively you can make this in a pressure cooker or instant pot.

Remove from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender, blending until smooth and returning it to the pot.

Stir in the coconut milk or cream and season with salt and pepper to taste. Simmer the soup for another 5 minutes until heated through.
