Hazelnut bonbons like Ferrero Rocher
This recipe was based on an internet recipe I found a couple of years ago, apologies but I can’t remember the original author, as I have tried and tested this one until I found the right ingredients and proportions to suit my own palate.
Since Valentines day is just round the corner, I thought I’d share my version of this recipe so that if you want, you can treat your loved ones to some home made bonbons. In my opinion nothing says I Love You more than home made treats.

Ingredients
250g hazelnut wafer - if you can't find hazelnut flavoured wafers vanilla one will be just as good.
15g unsalted butter
75g Nutella and a further 50g Nutella for step 6
130g roasted hazelnuts chopped into small pieces.
400g chocolate - you can chose the one you prefer. I used milk chocolate as this is the one I like.
5g of coconut oil
12 whole hazelnuts.

If your hazelnuts aren't already roasted, place them on a baking sheet and put them in a 180° oven for 10 mins. Wrap them in a tea towel to sweat for 5 minutes and them rub them vigoursly to remove the skins.

Remove the skins and reserve 12 whole hazelnuts and roughly chop the remaining nuts into coarse pieces.

Shred the hazelnut wafers until they resemble coarse sand. I simply blitz them in my grinder.

Add the 75g Nutella and unsalted butter to a bowl and melt together in the microwave for 30 second intervals until they both mix well together. You can also do this au Bain Marie on your cooker making sure you stir well all the time. It should look like the mix below.

In a separate bowl, add the shredded wafers and two tablespoons of the chopped hazelnuts, mix and add in the Nutella/butter spread. Mix to combine evenly, until you can mould it into balls in your hand.

Heat the remaining 50g Nutella. until it is soft enough to scoop.

Take 1 tablespoon of the wafer dough and roll into a ball. Flatten it, and add some of the softened Nutella to the centre, then place a whole hazelnut in on this and roll back into a ball keeping the Nutella and hazel nut in the centre. Place onto greaseproof paper. Repeat this with remaining dough. I made 12 individual bonbons.

Refrigerate for 30 minutes to harden the bonbons enough for the next few steps.

After 30 minutes, melt the chocolate with coconut oil. Remove two tablespoons of the chopped hazelnuts and reserve for topping then add the remaining hazelnuts into the melted chocolate and mix to combine.

Remove the bonbons from the refrigerator and one by one cover them in the chocolate/ hazelnut topping, and once again place them on your greaseproof paper. Sprinkle the remaining chopped nuts over the chocolate to decorate and refrigerate until the chocolate hardens.
