My Grandma’s Biscoff-Inspired Cookies
This beloved recipe has been in my family for generations, long before Biscoff and speculaas became popular.
These spiced, buttery cookies are perfect for the Christmas holidays and bring a taste of nostalgia with every bite.
They are perfect with a cup of tea or coffee, and they make a wonderful addition to any holiday cookie platter.

Ingredients
225 grams unsalted butter, room temperature
200 grams granulated sugar
100 grams brown sugar
1 teaspoon vanilla extract
315 grams plain flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice

Preheat your oven to 175°C, ( 170 if using a fan oven)

Line 2 baking sheets with grease proof paper

In a large bowl cream the butter granulated and Brown sugar together until light and fluffy, about 2-3 minutes. Add the vanilla extract and mix until combined.

In a separate bowl, sift together the flour, baking soda, salt, cinnamon, nutmeg, ginger, cloves, and allspice and mix together to combine evenly.

Gradually add the dry ingredients into the butter mixture, mixing until just combined. Do not overmix.

Scoop small amounts of dough (about 1 tablespoon each) and roll them into balls. Place the balls on the prepared baking sheets, spacing them about 5 cm apart. Flatten each ball slightly with the bottom of a glass or your palm.

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly undercooked, but they will firm up as they cool.

Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

I drizzled mine with a couple of spoonfuls of heated biscoff butter, and crumbled cookie to finish them off.
