Orange flavoured mini doughnuts – Rosquillas de Naranjas
These delightful little morsels graced our afternoon tea table on numerous occasions. They are the perfect size to be eaten in two bites (sometimes even one), can be packed and carried rather easily as they are quite hardy, and taste great.
These doughnuts – as opposed to a lot of other recipes – are baked and therefore produce a slightly drier version than its deep fried sibling. Its the perfect consistency to dunk into your cup of tea if you like that sort of thing.
Simple to make, lovely to eat, this recipe is a go to whether on a special occasion or for a daily treat.

Ingredients
560 grams Self Raising flour
150 ml Oil - I use olive oil but you can use whichever you have on hand.
150 ml Orange Juice - freshly squeezed is better, but you can used bottled if you don't have fresh oranges on hand.
2 eggs at room temperature.
100 grams granulated sugar.
Grated rind of one orange (lemon will work too if you don't have an orange on hand).
15 grams baking powder - measure this out.

In a bowl add Oil, Sugar and Eggs and beat for some five minutes until you have a creamy mix.

Add juice and rind - mix to incorporate

Sift in the Baking powder and flour and mix to form a dough.

Drop dough onto your worktop, and knead to form a ball - you might need to add a little more flour to your work surface for this. Cover the ball with cling film and let the dough rest on your worktop for 15 minutes.

In the meantime preheat your oven to 180° C.

After 15 minutes, form balls from your dough, make a hole in the centre and create your doughnut shape from this. You can make them whatever size you like as long as they are all equal in size so that they bake evenly. See pic below:

Bake in the middle shelf of your oven for 20-30 minutes. Then remove from the oven and allow to cool for 5 minutes.

Whilst still warm, dunk into sugar then move to a wire rack to cool completely.
