Simple Yogurt Cake

Ingredients

180 ml natural yogurt no added flavour
150 g granulated sugar
3 large eggs
80 ml vegetable oil
juice of 1 lemon or a teaspoon lemon extract.
1 teaspoon vanilla extract
200 g plain flour
1 1/2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
Pinch of salt
Grated Zest of 1 lemon

Instructions

Preheat your oven to 180°C (350°F or 170°C fan).

Grease and flour a 20 cm (8-inch) round cake pan or line it with grease proof paper.

In a large bowl, whisk together the yogurt, sugar, eggs, lemon juice, vegetable oil, and vanilla extract until smooth and well combined.

In another bowl, sift together the flour, baking powder, bicarbonate of soda, lemon zest and salt.

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.

Pour the batter into the prepared cake pan and spread it out evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Once the cake is completely cooled, you can dust the top with powdered sugar, more lemon zest, whipped cream, Greek yoghurt, or serve with fresh fruit if desired.
